Soil
Situated on one of Sancerre's most emblematic hillsides, "Les Monts Damnés" majestically overlooks the village of Chavignol. This exceptional terroir is made up of limestone soils known as "terres blanches", which give the wine structure and minerality.
Vinification
Hand-picked and carefully sorted in the vineyard, the grapes are carefully transported to the winery to preserve the integrity of the bunches. After gentle pneumatic pressing, the must is cold settled to preserve the aromatic purity of the Sauvignon Blanc. Fermentation takes place in 228- and 500-litre French oak barrels, with a small proportion of new barrels, thus limiting the impact of the wood. The wine is aged for 12 months, bringing complexity and harmony to the cuvée.
Features
This wine has a light yellow colour with golden highlights. Its complex, expressive nose combines citrus fruits (lemon, grapefruit), white fruits (apricot, peach, pear) and a hint of toast and spice from the barrel ageing. On the palate, the balance between roundness and freshness is perfect. The citrus aromas stretch out over a fine minerality, before a lingering finish with subtle woody notes.
An elegant, deep wine with great length.
Tasting notes from :

Perfect with fine fish such as red mullet or sea bass, enhanced by a creamy basil and dill sauce. Perfect with also with a delicious Crottins de Chavignol.
Ageing potential
Our white Sancerre "Les Monts Damnés" reaches its full potential 12 to 24 months after harvesting and will give you pleasure throughout its ageing period, which can vary from 5 to 10 years depending on the vintage and storage conditions.
