La Mercy-Dieu rosé
Designation
Sancerre rosé
Grape variety
Pinot noir
Area
2 hectares
Soil
This wine comes from 2 types of soil: 50 % flint and 50 % white earth.
Vinification
After harvesting by hand and sorting in the vineyard, the vinification process is identical to that for the white wine.
Pneumatic pressing and cold settling for 12 to 24 hours precede natural fermentation in temperature-controlled vats. The result is a delicate rosé wine with a partridge-eye colour.
Features
"Beautiful light ruby colour. Lovely nose of red berries: raspberry, strawberry, redcurrant. Very lively on the palate. Powerful aromas of red fruit. A wine full of greed and delicacy, with a crunch of fruit. Very fine finish. Lots of freshness and elegance. This rosé is the perfect accompaniment to summer salads, grilled meats, pizzas, pasta dishes, etc. "
